I thought we could all share our 4F recipes. They should be nutritious, minimum preparation time and easy to cook for when we are feeling 'cabbaged' (no pun intended)

I have posted this recipe before but it really is great.

Butternut and Red Pepper soup

Absolutely delicious. Virtually calorie free, fat and sugar free and great as a meal with some wholemeal bread or just as a snack.

Recipe is:

1 x butternut squash
1 x red pepper
1 x large onion
1 x deseeded red chilli (leave seeds in if you like hot)
2 x vegetable stock cubes
water

Roughly chop all ingrediants and place in a large pan. Put in enough water to cover the vegetables and add stock cubes and salt to taste. Bring to the boil, reduce heat and simmer for appox 30 mins or until vegetables are soft. Leave to cool and blend until smooth.

You can put this in containers and keep it for up to a week in a cold fridge. You can also freeze it.

A great tasty healthy filler.

Chicken Green Pepper in Chilli Soy Sauce

Serves 2

2 x boneless/skinless chicken breasts
1 x large onion
1 x large carrot
1 x green pepper
1 x green chilli or half a teaspoon of dried chillies (or to taste)
Soya Sauce

Chop the onion, green pepper and carrot into large peices. Cut the chicken breasts into strips. Fry off chicken in a small amount of olive oil add vegetables and continue to cook for approx 5/10 mins. Add soya sauce continue cooking of a further 2 mins and serve.

Can be served on it's own or with rice/noodles.

It is also nice with strips of beef.

You can also do it without the chicken Paulst. I have just added more carrot, mushrooms and beensprouts.

how about

Ginger Salmon in Parchment (or aluminum foil) - serves 4

320g shredded cabbage
1 red pepper, thinly sliced
120g sugar snap peas, halved
4 salmon fillets, skin removed
60ml soy sauce
2 spring onions
1tbsp crushed fresh ginger
garlic
1tsp sesame oil
pepper

cut 4 large pieces of paper/foil and fold each in half, reopen and set aside.

combine cabbage, red pepper, sugar snap peas. Divide veg evenly on 1 side of each piece of paper. Place salmon on top.

whisk together soy sauce, spring onions, ginger, garlic, sesame oil and pepper. pour over fish/veg. Fold over paper and seal edges. place packaged on tray and bake at 200 C or gas mark 6 for approx 20 mins, until fish flakes with a fork.

An all in meal with little washing up.

delicious.

Salmon Pesto

Put salmon fillet or steak on a square of foil. Spread with some pesto- we like the one with sundried tomatoes in it- Make a parcel. Bake about 180C for 20 mins

If you are doing more than one, just make a big parcel, you don't need to wash a baking tin if you are careful.

Serve with steamed veg, or fresh salad. savoury rice, couscous (no cooking)or potatoes of any sort.

McCormick's here in the US makes a citrus grill seasoning. It's so tasty with lemon juice on salmon. I used to kind of baste the salmon with it, but now I toss the salmon in and use aluminum foil to bunch the lemon juice close up over the salmon. I turn the salmon skin-side up and bake it. Yummy!

Any suggestions for canned black beans or baked beans?

They're so hearty and high-fiber. I'm going back on the DASH diet (as much as I can managed to stick to it, anyhow). It's a diet that doc recommended to lower blood pressure, and I previously lost 175lbs on it to re-gain 50lbs after breaking up with my ex.

I'd love to hear from any other SAD folks who are actively trying to diet. Maybe we could start a support thread if there's anyone else out there. If not, I'll just hang out at my usual weight-loss forum.

Just looked up the DASH diet, it looks very sensible! I'm lucky enough to have low BP, but I know I should work on my cholesterol!

I think that the biggest problem as far as food is concerned with SAD, is that it seems such an effort to cook sometimes. I like to cook things from scratch, not usually complicated things, but I try and keep convenience food to a minimum.

I hate to cook. Sadly, I cringe at the recipes listed here.

Right now, my cooking ability amounts to making sloppy joes and things from the can. I've been desperately hungry for pot roast, but even the thought of making it makes me want to cry. I have a lot of kitchen anxiety, and it's worse this time of year. Just bought myself a rotisserie chicken at the store. I didn't even have to heat it.

I get so upset about not eating right this time of year, but I desperately want to try. My asthma is getting worse right now and I know my arthritis would improve. At least this pill that I'm taking lets me get up and move around some. I think part of the reason I started off so bad this winter is I was in constant pain before I started taking the arthritis pill.

DASH is wonderful. It is such a great help to me when I'm able to follow it. I slipped up today, but I'm going to have my good and bad days. Weekends are tough!

I love getting those ready cooked chickens. Even in the summer, they're a real boon, when it's too hot to cook, just rustle up some salad.

Dont worry Amalthea, I certainly donot feel the need to cook constantly - On a bad day, I cant see my kitchen worktop for start off!

But there are days when I feel the need to try. I then go all out and wear myself out.

The ready made chickens are brill. Fantastic for all the family.

On a bad day, if I see past all the goodies in the cupboard, I might make a caesar salad. The lettuce is bagged, the parmasan is already grated, the chicken already cooked. Just add a sliced apple, and other quick salad stuff in the fridge (even the idea of peeling a carrot can put me off). With a bit of crusty fresh bread - its easy and healthy.

We are a family of veggies, so suzies recipe suited us perfectly, I dont normally eat soup, but the recipe was very tasty, I used to be a chef several years ago, but still enjoy basic simple food cooked well.

I very rarely cook during the winter. If I have an 'ok' day I will try and do something relatively healthy, veggies or salad and something. I do try but fail dismally most days.

Amalthea! I'm attempting to lose weight... SOOOOOOOO isn't happening though! I just eat anything and everything when I'm on a bad day (either that or I eat nothing which doesn't exactly help either!!!) :s

kaz_me, I know just what you mean. I say I'm going to fight it and then in the next instant, I've ducked my head into the fridge. Yesterday, I ate a Lean Cuisine Santa Fe Beans and rice for lunch... then I went to the grocery store and bought a rotisserie chicken. I didn't even get it home before I was picking at it...

Oh, just walking down the sidewalk, sticking my fingers into that greasy meat... I can't tell you how silly I felt.

And then I get home, eat half the chicken and then dive into the food I bought... Oh, a Lean Hot Pocket... and half a tub of fat-free cool whip...

It was just an awful binge. The rest of the chicken went for dinner, so I ate the whole chicken by myself yesterday. When I threw out the remains, I was so disgusted. Along with all the other food I ate... the rest of the Cool Whip, some jelly from the jar, half of a huge tub of meringes, a second lean pocket... Who knows what else!

But, this apparently is going to happen from time to time. I'll just do my best with it and keep on going. Chances are, I will be fairly indifferent to food today.

I get really hungry for food this time of year but it NEVER tastes as amazing as I think it's going to. I could eat the must decadent baked good and it just wouldn't live up to my expectations. I think I binge because I'm desperately looking for flavor.

Well, I fixed myself up. I bought jalapenos and banana peppers to munch on. That ought to be flavorful. :P

Jalapenos wouldn't be my first choice either!

Not sure what we'll eat tonight, the sink isn't there any more and I have no water downstairs! something that doesn't need draining, or water to cook in... dd helpfully suggested chippy!

Oh, thank goodness I found this thread again. Couldn't think of what it was!

So, who wants to come to my place for dinner? I had a marinated portabella mushroom sandwich, applesauce topped with cinnamon and two hard-boiled eggs. And a few low-cal chocolate meringues for "dessert."

I tried snacking on a jalapeno, but it was hotter that way than I thought! Might chop one up and put it in a sandwich. I had a pickle instead.

hahaha bout the jalapeno!! But as nice as the offer was, I hate mushrooms and eggs so wouldn't have been too nice for me! :)

I know we should be eating healthy, but my favourite comfort type food is pizza, cheese,tomato, sweetcorn with red and green peppers, yum.

Ha, anyone who missed the first dinner with me last night gets another chance.

Tonight, it is... marinated portabella burger with 2 hard-boiled eggs, applesauce topped with cinnamon!

Actually, I'm in a rut because I'm leaving for a holiday tomorrow and have to eat up the things in the fridge that would go bad in my absence. And I'm single, so a two-pack of mushroom caps means mushrooms for two nights in a row.
